PARSI VEGETABLE DAL Servings : 4 to 6
Toor Dal – ½ cup, Moong Dal – ½ cup, Bengal Gram – ½ cup, Methi leaves – 50 gms, Pudina leaves chopped – 20, Green Chillies finely chopped – 2 nos, Small Bringal diced – 2 nos, Yellow Pumpkin diced – 1 cup, Turnips diced – 2 nos, Onions thinly sliced – 2 nos, My Choice Turmeric Powder – 1 tsp, My Choice Dhansak Masala – 2 tsp, Tomatoes fine chopped – 2 nos, Ghee – 4 tsp, Lemon juice – 1 tbsp, Coriander chopped – 2 tbsp, Salt to taste
COOKING METHOD :
Soak all the 3 dals separately for about 30 minutes. Once soaked, place all three dals, vegetables, methi leaves, pudina leaves, green chilli and a tsp of My Choice Turmeric Powder in a pressure cooker. Add salt and 3 cups of water. Once the dal is soft and done, mash all the ingredients using a potato masher until all the dals and vegetables get a smooth texture. In a deep pan, heat ghee, add the onions and sauté until brown, add tomatoes and cook till soft. Add My Choice Dhansak Masala and stir for a minute, add the mashed dal and cook on low flame for about 10-20 minutes. Add water if required. Add lemon juice and coriander. Serve the Vegetable Dhansak along with Brown Rice.
