Mughlai Masala


Coriander, Chilli, Turmeric, Fennel, Green Cardamom, Cinnamon, Cloves, Bay Leaves, Nutmeg, Mace, Star Anise, Salt



MUGHLAI CHICKEN                                                                                                                                      Servings : 8


Chicken cut into pieces – 500 g, Milk – 200 ml, My Choice Mughlai Masala – 3 tsp, Cumin Seeds – 1 tsp, Onion medium size chopped – 3 nos, My Choice Kasoori  Methi  – 1 tsp, Cashews – 15 (to be grounded into paste), Oil for deep frying, Salt to taste

For Marination :

Lemon juice – 2 tbsp, Ginger Garlic paste – 2 tbsp, My Choice Garam Masala – ½ tsp


Wash all the chicken pieces properly and place them in a bowl.  Add salt and all the ingredients for marination and let it marinate for 15-20 minutes.  In hot oil deep fry the chicken until golden brown in colour.  Heat a pan, add 2 tsp oil, cumin, onion and fry for 2 minutes.  Add cashew paste and sauté for 2-3 minutes.  Add My Choice Mughlai Masala, add milk, cover and cook for 5 minutes.  Add some water if required.  Add the deep fried chicken and My Choice Kasoori  Methi.  Stir occasionally and cook well for about 20 minutes on a slow flame.  Garnish with coriander leaves and serve hot with Chappathis, Parathas or Steamed Rice.
